Caimito is called star fruit because of the starburst pattern formed by the seeds when the fruit is cut crosswise. Their white milky flesh tastes like light condensed milk with berry flavors. The green variety we grow is called Hipolito and comes from the Dominican Republic. The green skin turns to a light golden color when the fruit is ready to eat. It has a thinner rind and in my opinion, it is slightly sweeter than the purple variety.
